Pumpkin Spice Cashew Butter Latte on a Stick

Ingredients

  • 1 (8.5-ounce) can PLANTERS® Lightly Salted Whole Cashews
  • 1/4 cup pumpkin puree
  • 1 tablespoon olive oil
  • 1/2 cup mini marshmallows
  • 1/2 cup milk chocolate chips, melted
  • 8 popsicle sticks
  • 8 mini muffin papers
  • Serving suggestions: espresso, latte, coffee

Directions

  1. Line a mini muffin pan with 8 paper liners.
  2. Chop cashews and set aside ¼ cup.
  3. In bowl of food processor add remaining cashews, pumpkin puree and olive oil.  Process until smooth.  Press cashew butter into small mini muffin papers. Top each with mini marshmallows and reserved chopped cashews.  Insert popsicle stick into center.  Freeze pops 2 hours.
  4. Remove paper wrappers from each frozen pop.  Dip pops into bowl of melted chocolate. Set on parchment-lined baking sheet in freezer 10 minutes.
