Asian Chopped Salad with Peanut Dressing

Ingredients

Salad

  • 4 cups shredded napa cabbage
  • 1 1/2 cups shredded red cabbage
  • 1/2 red bell pepper, thinly sliced
  • 1/2 yellow bell pepper, thinly sliced
  • 1/2 cup julienned carrot
  • 1 cup thinly sliced mango
  • 1/4 cup cilantro leaves
  • 8 torn mint leaves
  • 2 green onions, chopped
  • 1/2 cup PLANTERS® Dry Roasted Peanuts, roughly chopped

 

Dressing

  • 1/3 cup SKIPPY® Creamy Peanut Butter
  • 2 tablespoons lime juice
  • 3 tablespoons honey
  • 1 1/2 tablespoons rice wine vinegar
  • 1 1/2 tablespoons soy sauce, low sodium
  • 1 teaspoon sesame oil
  • 1 teaspoon sriracha
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 1 tablespoon water

Directions

  1. In a large bowl place Salad ingredients.
  2. In bowl, whisk together Dressing ingredients. Drizzle over Salad. Toss to combine.
