| 1 | (8 to 10 ounces) goat cheese log, at room temperature |
| ¼ | cup oil packed sundried tomatoes, patted dry and finely chopped |
| Zest of 1 lemon | |
| ½ | teaspoon black pepper |
| ½ | cup finely chopped PLANTERS® dry roasted peanuts |
| 3 | tablespoons finely chopped parsley |
| 3 | tablespoons minced chives |
Directions
In medium bowl, place goat cheese. Stir in sundried tomatoes, lemon zest and pepper. Form goat cheese into a log.
In shallow dish, stir together peanuts and herbs. Roll goat cheese log in peanut and herb mixture to coat. Wrap in plastic wrap. Refrigerate 1 hour. Serve with crackers.
