This Herbed Peanut Goat Cheese Log blends creamy goat cheese with sundried tomatoes, lemon zest, and black pepper for a flavorful appetizer with a gourmet twist.

1 (8 to 10 ounces) goat cheese log, at room temperature
¼ cup oil packed sundried tomatoes, patted dry and finely chopped
Zest of 1 lemon
½ teaspoon black pepper
½ cup finely chopped PLANTERS® dry roasted peanuts
3 tablespoons finely chopped parsley
3 tablespoons minced chives

Directions

  1. In medium bowl, place goat cheese. Stir in sundried tomatoes, lemon zest and pepper. Form goat cheese into a log.

  2. In shallow dish, stir together peanuts and herbs. Roll goat cheese log in peanut and herb mixture to coat. Wrap in plastic wrap. Refrigerate 1 hour. Serve with crackers.
