Cashew Truffle Surprise 
Makes: Makes 2-1/2 doz. or 15 servings, two truffles each.

INGREDIENTS
1-1/2 pkg. (12 squares) BAKER'S Semi-Sweet Chocolate

1/2 cup whipping cream

1/2 tsp. vanilla

1 can (9.25 oz.) PLANTERS Cashew Halves with Pieces, divided



INSTRUCTIONS
Cook and stir chocolate and cream in saucepan on low heat until chocolate is completely melted. Stir in vanilla. Refrigerate 1 hour or until firm. Meanwhile, reserve 30 cashew halves. Finely chop remaining cashews.

Shape chocolate mixture into 30 (1-inch) balls with melon baller or teaspoon. Insert 1 cashew half into center of each ball; reshape ball to enclose cashew. (Balls need not be perfectly round.) Roll in chopped cashews.

Place in waxed paper-lined 15x10x1-inch pan. Refrigerate 1 hour or until firm. Store in tightly covered container in refrigerator. Remove from refrigerator 30 min. before serving to soften slightly.
